Description
Cane sugar for the most delicious baking products
Cane sugar is a light brown sugar extracted from sugar cane. Cane sugar is virtually the same as the coarse variety of granulated sugar. They are extracted in different ways, but the sugars are identical. Among other things, you can use cane sugar to sprinkle over batter or dough. This is how you create that crunchy, sweet layer! At Natural Spices you can order this type of sugar online in pack sizes of 3 and 25 kilos.
How is cane sugar obtained?
Cane sugar is obtained from the juice in the stems of sugar cane. That juice is boiled and then crystallized and sieved. Because it is centrifuged for a shorter period of time than beet sugar, the syrupy molasses which is responsible for the brown colour remains. The colour also gives it a slightly different taste.
The difference with granulated sugar
Where cane sugar is made from sugar cane, beet sugar (granulated or table sugar) comes from sugar beet. In the case of sugar cane the sugar is in the stem and in the case of sugar beet in the root. Although the two grow and are extracted in different ways, they are identical. Cane sugar is darker, however, this is due to its mixture with molasses. Molasses is a syrupy by-product that is produced during the production process. The two types of sugar have exactly the same properties, so one is not healthier or unhealthier than the other. They consist of the same ingredients, namely glucose and fructose, and contain the same amount of calories.
During baking
Cane sugar is often confused with soft sugar because of its colour. However, soft sugar is finer and contains more moisture. Because of this you will get a 'wetter' baking result than when you use cane sugar. In a recipe you can replace granulated sugar 1 on 1 with cane sugar. Please note that it is slightly coarser, so if you have to beat it into an airy mixture in combination with egg, it will take a little more time.
