Chorizo herbs are used to make the world famous, spicy Spanish sausage. A sausage that is suitable to accompany drinks, or to use in various meals. As it is traditionally intended, garlic and paprika are the main ingredients in this spice mix. The paprika is also partly responsible for the reddish colour of the sausage. What are chorizo herbs?
Though paprika and garlic are the proud protagonists in the herb mix, chorizo herbs consist of even more ingredients. Together they form a spicy and well-balanced whole. You will find chilli, cumin, allspice and pepper in the mix too. For each kilogram of meat, use 16 grams of chorizo herbs and add 25 grams of colorozo. Chorizo is always made from coarsely ground pork.
The use of colorozo
Besides mixing these chorizo herbs with the meat, you also add colorozo. This is a type of salt containing nitrites that is widely used in the meat processing industry because of its favourable properties. In the first place, it prevents bacterial growth and thus extends its shelf life. It also makes the meat less sensitive to temperature and prevents colorozo colour loss. In this way, the sausage retains its attractive colour for longer. So always use colorozo in combination with chorizo seasoning to achieve the optimum result.
The versatility of chorizo sausage
As mentioned above, chorizo sausage is eminently suitable for serving during drinks, but it also does very well in meals. The paprika powder present in the chorizo spices and with its sweetish and at the same time smoked taste, ensures that the sausage is able to add flavour to many different dishes.
