Dark castor sugar for best baking results

Dark castor sugar is a typical Dutch product and even enjoys a protected status at European level. It is made by mixing carefully sieved granulated sugar (made from sugar beet) with an invert sugar syrup. This syrup consists of glucose and fructose dissolved in water. To obtain dark castor sugar, this mix is then enriched with sugar syrup and caramel. You can order this sugar, also known as 'brown sugar', online from us in a package of 25 kilos.

The characteristics of dark castor sugar

Mixed with the invert sugar syrup, dark castor sugar contains more water than granulated sugar. As a result, this type of sugar can form lumps quite quickly. However, this apparent disadvantage comes in handy during baking. Due to the high moisture content and the fine grain of the brown sugar, it is absorbed more quickly. This gives your cake or other sweets a finer structure. In addition to baking, you can also use the sugar as a spread or mix it with yoghurt. Brown sugar is gluten-free, MSG-free and suitable for vegetarians and vegans.

The advantages of using dark castor sugar R3

Dark castor sugar has a number of advantages during baking compared to ordinary granulated sugar. In the first place, your product will brown a lot faster. This not only means that it gets a nice colour, it also has a positive effect on the taste. Further, it stays fresh for longer and has a longer shelf life. Dark castor sugar has an unlimited shelf life. You could use dark castor sugar for a characteristic sugar layer on cinnamon rolls or traditional Dutch sweet bread as well.

Dark castor sugar in savoury dishes

In addition to sweet dishes, you could add dark castor sugar too savoury meals or sauces. Think for example of a beef stew. Use it in a chicken marinade or make it part of a home-made marinade. This gives meat a spicy touch as well as a hint of sweetness.
