Dried glucose syrup is a 100% pure, natural sweetener. It is often used in sports drinks, but you can also use it during baking as a substitute for 'normal' granulated sugar. What exactly is dried glucose syrup?

Dried glucose syrup is actually a corn syrup. By means of a complex process different components are separated from each other. The starch resulting from this process can be converted into dried glucose syrup after further processing. We also call the syrup maltodextrin. Because the syrup is extracted from corn it is gluten free. The dried glucose syrup that you can order online at Natural Spices has a DE (Dextrose Equivalent) of 21. The syrup is not only gluten free but also vegan and contains no artificial sweeteners.

The difference between dried glucose syrup and fructose

Most sugars consist of glucose, fructose or a combination of the two. Crystal sugar consists of exactly half for glucose. The sugars have the same nutritional value and therefore the same number of calories. The difference, however, is that fructose is no less than twice as sweet. If you want to achieve the same degree of sweetness, you need more of glucose. However, dried glucose syrup is absorbed directly into your blood and processed faster than fructose. Fructose is absorbed in your small intestine by means of a specific protein. If you have a fructose intolerance, this system does not work properly. This is also called fructose malabsorption and results in various physical complaints.

The use in the kitchen

Dried glucose syrup is a good alternative to granulated sugar and dextrose. It is therefore suitable for people with a fructose intolerance. In the kitchen it has the same baking properties as granulated sugar. In most recipes you can replace granulated sugar 1 on 1 with dried glucose syrup. The result then becomes a little less sweet.
