Gluten free and vegan pumpkin pancakes recipe

Ingrediënten:
For 6 pancakes: 100 g organic pumpkin (cut into cubes), 180 ml almond milk, 50 g oatmeal (ground into flour), 50 g buckwheat flour, 1/2 tsp baking powder, 1 tsp 'koek- en speculaaskruiden', 1 tsp cinnamon, Smoothie Operator (to taste), dash of maple syrup (not allowed), pinch of salt, oil for baking, fresh fruit (e.g. banana, blueberries, pear, kiwi, orange), coconut yogurt (optional).
Bereidingswijze:
Steam or boil the pumpkin cubes for 15-20 minutes. Puree afterwards. Then mix all ingredients, except the oil, in your blender or food processor to an smooth pancake batter. Fry the pancakes in a frying pan with oil orange brown. Sprinkle some Smoothie Operator (to taste) over the pancakes before serving. Tasty with some maple syrup, coconut yogurt and fresh fruit!
