Indian stew Recipe


600 gr stewed/boiled beef

1 tsp cinnamon powder

4 tbsp Hurry Curry

2 cloves of garlic, crushed

½ tsp ground cardamom

pinch of cayenne pepper

1 tbsp wine vinegar

2 shallots, chopped

1 green pepper, finely chopped

400 ml coconut milk

1 tbsp lime juice plus zest

salt and pepper to taste

ghee butter or sunflower oil for frying

Optional: Fried broccoli with almonds and spring onion, also delicious with rice.

Preparation method:

Cut the meat into cubes. Place the meat in a bowl and add salt, pepper, cinnamon, 3 tablespoons Hurry Curry, garlic, cardamom, cayenne pepper and some vinegar. Marinate for 1 hour. Heat ghee, or clarified butter, in a casserole pan. Fry the onion and add 1 tablespoon of Hurry Curry and a green pepper. Cook on medium heat for 5 minutes. Then add the meat. Fry the meat until golden brown and toss every now and then. Then add the coconut milk. The meat should be just below the liquid, otherwise top up with water or vegetable stock. Let it simmer for another three hours. Add the lime juice and zest for the last half hour. Season with some salt and pepper if necessary. Delicious to serve with naan on the side.
