Ingredients (3 - 4 persons):
580 g potato potatoes, 500 g broccoli, 140 g cherry tomatoes, 1 tbsp Vis à vis, 3 salmon steaks (about 130 grams each), 1 lime, 4 tbsp olive oil, black pepper and salt
Preparation method:
Heat the oven to 200 degrees. Peel the potatoes in half, if desired. Wash the potatoes and dry well. Divide over the baking tray and drizzle with 1 to 2 tablespoons of olive oil. Season with black pepper and salt. Now bake the potatoes in the oven for 12-18 minutes. Place the salmon fillets in a suitable bowl. Add 1 tablespoon of olive oil and the Vis à vis. Mix gently, cover and refrigerate for a while.
Now cut the broccoli into florets and wash well. Also wash the cherry tomatoes. Place in a bowl and add 1 tablespoon of olive oil. Season with black pepper and salt and mix well. After 12-18 minutes, divide the broccoli florets over the potatoes and also divide the cherry tomatoes over it. Place the salmon slices over the potato as well. Cut the lime into wedges and divide over the salmon. Add a little black pepper if desired. Bake for another 8-15 minutes in the oven. Time is of course dependent on the thickness of your salmon steak. Serve with a delicious, fresh salad of your choice.
