Sodium sulphite is a white, unstable powder that reacts with acid substances to form sodium sulphate. In acid conditions sulphuric acid is formed, which in fact has a preserving effect. It is used as a preservative and as a bleaching agent to prevent the decay and discolouration of foodstuffs. In meat it prevents browning, but it may not be used in meat, since it could mask bacterial decay (recognisable by the brown colouring). It is also used in bread making, since it improves the rising and kneading properties. Sodium sulphite is a salt of sodium and sulphurous acid. The excipient is used for many different purposes and can be found in various industries. For example, it is also used in the paper and pharmaceutical industries. In the food industry it is used as a bleaching agent to preserve the fresh appearance of products as much as possible. It is a white, odourless powder that sinks into water and slowly dissolves. Sodium sulphite has a slightly salty taste. In addition to being a bleach, it is also a preservative. It has been assigned number E-221.


The composition of sodium sulphite


Sodium sulphite is found in crustaceans, sultanas, dried fruit and wine. The latter contains a limited amount of this substance already naturally. It is also used as a bread improver.
