Ingredients:


900 grams of potatoes


1 cube of vegetable broth


2 stumps of fennel


Butter


1 leek


1 large red onion


200 grams of smoked salmon


Dash of milk


Vis-a-vis fish seasoning to taste


Pinch of nutmeg


Tasty add-ons: cherry tomatoes, capers, mozzarella, watercress, arugula

Preparation method:


Peel the potatoes and cut into equal pieces. Boil the potatoes in a pan with a cube of vegetable broth for 20 minutes. Halve the stumps of fennel, cut out the hard core and cut into strips. Keep the green of the fennel aside. After 10 minutes, add the fennel to the potatoes and let it cook for another 10 minutes. Wash the leek and cut into thin rings. Peel the onion and cut into cubes. Fry the leek and onion in a frying pan with butter. Drain the potatoes and fennel. Add the milk, leek and onion. Add the finely chopped Vis-a-vis fish seasoning to taste and a pinch of nutmeg and mash into a stew. Serve with the smoked salmon and fennel greens. Add tasty add-ons of your choice. And enjoy!
