Venda: colour retainer and Listeria growth inhibitor

Venda is an additive with a double function. Not only does it ensure colour retention and therefore an enhanced (fresh) appearance of meat, minced meat and poultry, it also inhibits the growth of Listeria bacteria. Venda is able to do this without changing the taste of the product. The additive consists of various food acids but is almost tasteless if you stick to the quantity of recommended use. What exactly is Listeria?

Listeria is a bacterium that can cause a food infection. Risk products include pre-packed fish, raw animal products and raw milk cheese. Listeria is most commonly found in foods of animal origin. Listeria is a persistent bacterium that can survive well in various environments. In healthy people, the symptoms of disease are limited to flu-like symptoms.
