Where does ground mace come from?


Mace is from the same tree as nutmeg, the originally Indonesian nutmeg tree, and therefore has a largely similar flavour. Fruits growing on this nutmeg tree can be compared to apricots in shape. The black kernel on the inside of these fruits is the nutmeg. The colourful membrane around it is the mace. The membrane discolours during the drying process and gets a beautiful, deep orange colour.


The taste difference between mace ground and nutmeg


Mace ground and nutmeg have a very similar taste. The differences between the two are only small. Nutmeg tastes spicy and slightly sweeter than mace. Mace has a milder, but somewhat bitter taste. You can say that mace tastes a little fresher and can best described as a warm, aromatic taste with a spicy edge. In the kitchen, you add mace ground at the start of preparing your dish. This to allow the mix to blend in well with the ingredients. The aroma of nutmeg evaporates more quickly and that is why you only add it at the end of the preparation.
