The main difference between the Ceylon cinnamon and cassia (Cinnamomum cassia) is the content of coumarin. Oragnic cassia contains approximately 2 to 5 grams of coumarin, while organic Ceylon cinnamon contains only approximately 0.015 grams coumarin. Our Ceylon cinnamon is analyzed on coumarin so we definitely have the best quality cinnamon.
The true organic Ceylon cinnamon is softer and slightly more complex and milder flavor than cassia.
