What is the difference between organic Ceylon cinnamon and organic cassia cinnamon?
The main difference between this organic Ceylon cinnamon and cassia (cinnamomum cassia) is the coumarin content. Cassia contains about 2 to 5 grams of coumarin while Ceylon cinnamon only contains about 0.015 grams of coumarin. Our organic Ceylon cinnamon is analysed for coumarin so that we can be sure of the best quality.
The authentic organic Ceylon cinnamon is softer and slightly more complex and milder in taste than cassia. You can recognise cinnamon by its densely rolled-up pipes, cassia is usually a little thicker and the pipes are hollow. The deep, full flavour of cassia goes well with savoury dishes, while the more delicate Ceylon cinnamon combines better with sweet (desserts).
