Chapli kebab mix is used for chapli kebab. This is an age-old dish that is still eaten very often in the Oriental world today. Pakistan, specifically the city of Peshawar, is known for it. Originally it is a Persian recipe. Traditionally it is made from minced beef or lamb. Of course you are free to use the minced meat of your preference. With kebab you almost automatically think of meat on a skewer, however this chapli kebab mix is meant for meat that is considered a typical grill dish in the Middle East. Chapli means 'flat' and is also sometimes translated as 'slipper'. The dish owes its name to its characteristic flat shape.


Using the chapli kebab mix


The use of the chapli kebab mix is very simple. You add 30 grams of the herb mix per kilo of minced meat. You knead the mixture well and then roll it into balls, which you finally press flat with your hands. It is best to leave the minced meat in the fridge for another hour after mixing, so that the flavours of the chapli kebab mix soak in well. Because of the wheat starch in the mix, the meat remains more airy. This is a well-known technique that is used in the east on grill dishes. You fry the kebab in a large layer of oil.
