Lemon Herb Butter: simple recipe for BBQ, fish and bread
This fresh lemon-herb butter is a simple flavoring that pairs perfectly with a barbecue, a piece of grilled fish or a warm baguette. The combination of creamy butter, fresh lemon and aromatic herbs gives any meal a summery twist.
Ingredients
- 250 g unsalted butter, at room temperature
- Zest of 1 organic lemon
- 1 tbsp fresh lemon juice
- 1 tbsp finely chopped fresh parsley or 1 tsp dried peterselie
- 1 tsp finely chopped fresh rosemary or ½ tsp dried rozemarijn
- 1 tsp finely chopped fresh thyme or ½ tsp dried tijm
- 1 small clove garlic, pressed or ½ tsp knoflookpoeder
- ½ tsp sea salt
- Freshly ground black pepper to taste
No fresh herbs on hand? You can of course also use dried herbs.
Tip: Dried herbs have a more intense flavor than fresh herbs. Therefore use about one third of the amount you would use for fresh herbs. Let the herb butter rest in the refrigerator for at least 30 minutes after mixing so the dried herbs can absorb into the butter and lemon juice.
Method
- Place the soft butter in a bowl.
- Add the lemon zest, lemon juice, parsley, rosemary, thyme and garlic.
- Season with sea salt and black pepper.
- Mix everything well until a creamy herb butter forms.
- Spoon the butter onto a piece of baking paper or cling film and roll into a firm cylinder.
- Chill for at least 1 hour in the refrigerator.
- Slice and serve on grilled meat, fish, vegetables or fresh bread.

Variation tips
- For fish: replace the rosemary with extra dill.
