  • 3–4 tbsp tomato sauce (spread thin)

  • ½ zucchini, thinly sliced

  • ½ red bell pepper, cut into strips

  • Extra mozzarella or grated cheese

  • Fresh basil or oregano

Method

Step 1 – Preheat oven

Preheat the oven to 200°C (top and bottom heat). Line a baking tray with parchment paper.

Step 2 – Make the batter

Mix cottage cheese, eggs, mozzarella, flour, herbs, salt and pepper in a bowl.
Want a smoother crust? Blend briefly with an immersion blender.

Step 3 – Shape the crust

Spread the mixture on the baking tray into a round pizza crust about 0.5–1 cm thick. The thinner you spread it, the crispier the final result.

Step 4 – Par-bake

Bake the crust 15–18 minutes until golden brown and firm.
This is important: fully cook first before adding toppings.

Step 5 – Top

Remove the crust from the oven, spread thinly with tomato sauce and distribute the toppings.

Step 6 – Finish baking

Bake another 8–10 minutes until the cheese is melted and the edge becomes lightly crisp.

Step 7 – Finish

Garnish with fresh herbs and optionally a light drizzle of sauce for extra flavor.

Airfryer Variant

  • Preheat the airfryer to 180°C

  • Bake the crust 10–12 minutes

  • Add toppings

  • Bake another 5–6 minutes

Ideal for individual mini pizzas.

Serving tip

Cut into slices and serve with a fresh salad.
Want it extra flavorful but light? Choose a thin drizzle of a low calorie garlic or chili sauce for that little extra without many extra calories.
