Cranberry lime energy balls recipe

Ingredients (for about 27 balls):
160 grams of almonds, 120 grams cashew nuts, 170 grams medjoul dates, pitted 115 grams dried cranberry juice and zest of 1 lime, 20 grams Natural Spices Skinny Vanilly, 1 teaspoon, vanilla essence, pinch of salt
Optional: grated coconut or extra Skinny Vanilly to roll the balls in.
Preparation method:
Put the almonds and cashew nuts in a food processor and mix it fine, it does not have to be mixed completely into powder, a little structure in your balls is nice. Place the rest of the ingredients in the food processor and whiz until a sticky mixture forms. If it doesn't stick together enough, add 1 to 2 tablespoons of water to the food processor. Add the mixture to a bowl and then roll it into balls in the palm of your hand, about 22 grams each. Roll the balls in some grated coconut or Skinny Vanilly. Place them in a sealable package lined with baking paper and put them in the fridge for 2 hours to firm up. Also keep the balls in the fridge, they can be kept for at least a week, you can also freeze them per portion.
