It is made by mixing carefully sieved granulated sugar (made from sugar beet) with an invert sugar syrup. This syrup consists of glucose and fructose dissolved in water. To obtain dark castor sugar, this mix is then enriched with sugar syrup and caramel. You can order this sugar, also known as 'brown sugar', online from us in a package of 25 kilos.

Mixed with the invert sugar syrup, dark castor sugar contains more water than granulated sugar. As a result, this type of sugar can form lumps quite quickly.
