Ingredients (2 people / ± 6–8 small pancakes)

  • 2 eggs
  • 100 g cottage cheese
  • 1 large handful fresh spinach
  • 2–3 tbsp oats (finely ground) or flour
  • 1 tsp Habibi Veggie spice mix
  • pinch of salt (optional)
  • oil or butter for frying

Method

  1. Put the spinach together with the eggs in a blender and blend until smooth, bright green.
  2. Add the cottage cheese and blend briefly (or stir in for some texture).
  3. Stir in the oats or flour and the Habibi Veggie spice mix until a slightly thick batter forms.
  4. Heat a little oil or butter in a pan over medium heat.
