Ingredients (2 people – approx. 8 thin crêpes)

For the crêpes

  • 2 eggs

  • 150 ml unsweetened almond milk or semi-skimmed milk

  • 60 grams oat flour (or finely ground oats)

  • 1 tablespoon Skinny Vanilly

  • Pinch of salt

For the filling

  • 150 grams fresh strawberries, chopped

  • 150 grams low-fat quark or Skyr

  • 1 teaspoon cinnamon

  • Extra Skinny Vanilly to taste

Preparation

  1. Put eggs, milk, oat flour, Skinny Vanilly and a pinch of salt in a blender and mix until a smooth batter. Let rest 5–10 minutes so it thickens slightly.

  2. Heat a frying pan with a little cooking spray or a small knob of butter. Pour a thin layer of batter into the pan and tilt around to get a thin crêpe.

  3. Cook the crêpe 1–2 minutes per side until lightly golden brown. Repeat until the batter is finished.

  4. Mix the quark with cinnamon and optionally some extra Skinny Vanilly.

  5. Spread each crêpe with a thin layer of the quark mixture. Distribute some strawberries over one side and roll up tightly.

  6. Optionally cut diagonally in half and drizzle with low calorie caramel sauce.

  7. Serve immediately.

Airfryer option

Want them a bit firmer or slightly crispy?

Place the rolled crêpes in the airfryer for 3–4 minutes at 180°C.
Be careful not to bake them too long, otherwise they dry out.
