Spiced coconut-banana-pumpkin pancakes
Ingredients (for 2-3 people)
- 1 banana
- 65 grams roasted or cooked pumpkin (weighed after preparation)
- 0.5 tsp turmeric
- 0.5 tsp cinnamon
- 1.5 tbsp Natural Spices Skinny Vanilly
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla extract
- 4 eggs
- 60 grams coconut flour
- 1 tsp baking powder
- Splash of almond milk
Method
- Put all ingredients together in a blender or mix with a hand blender until combined.
- Let the batter rest for 10 minutes so the coconut flour can absorb the moisture. Add some extra almond milk if you find the batter too thick.
- Heat some coconut oil in a large frying pan and use a small ladle to make three small batter heaps in the pan.
- Cook the pancakes over low heat until the top becomes a bit drier. Then carefully flip them with a spatula. Repeat until the batter is used up.
- Divide the pancakes over plates. Serve with, for example, fresh fig, banana slices and maple syrup. Sprinkle some extra Skinny Vanilly on top.
