Lamb kebab skewers
Ingredients (for 15 skewers)
- 650 g minced lamb
- 10 g fresh parsley
- 2 small onions (or 1 large onion)
- 2 cloves of garlic
- 1.5 tsp cumin
- 1.5 tsp oregano
- 1.5 tsp sumac
- 1 tsp smoked paprika
- 0.5 tsp cinnamon
- 0.5 tsp chili flakes
- Salt and pepper
Preparation
- Put the minced meat in a bowl.
- Chop the parsley finely. Cut the onion very finely or pulse in a food processor. Add the parsley and onion to the meat. Press the two cloves of garlic over the bowl and add all the spices to the meat.
- Knead everything well into the meat with your hands. Cover the bowl briefly and let stand for at least 30 minutes.
- Soak some wooden skewers in a container of water.
- With your hands, shape small rolls of the meat and 'fold' them around the skewer.
- Heat a grill pan and lightly brush it with some olive oil.
- Place the skewers in the pan over medium-high heat and grill for about 6–8 minutes, turning them regularly so all sides cook and become golden brown.
- Serve, for example, with pita bread, a Greek salad with chickpeas and/or tzatziki. Also nice with fries from the Airfryer.
