Roasted Pineapple with Lime & Chilli
Sweet, juicy pineapple takes on a delicious caramelised flavour when grilled. Finished with fresh lime, a hint of chilli and a sprinkle of Natural Spices Smoothie Operator, this simple dessert is bursting with tropical flavours. Serve it warm with coconut ice cream or blood orange sorbet for the perfect summer treat.
Ingredients (serves 4)
- 1 ripe pineapple
- 1 tbsp olive oil
- 1 tbsp ground aniseed
- 1 tsp dried chilli flakes
- 2 tbsp Natural Spices Smoothie Operator
- 1 lime, zest and juice
- Coconut ice cream or blood orange sorbet, to serve (optional)
Method
- Cut off the top and base of the pineapple and remove the peel. Carefully trim away any remaining eyes.
- Slice the pineapple into rings or wedges about 1 cm thick.
- Brush both sides lightly with the olive oil.
- Heat a grill pan over medium-high heat. Grill the pineapple for 3–4 minutes per side until caramelised with deep golden grill marks.
- Sprinkle over the chopped chilli and ground star anise during the final minute of grilling.
- Remove the pineapple from the pan and drizzle with the lime juice. Finish with the lime zest and a generous sprinkle of Natural Spices Smoothie Operator.
- Serve warm on its own or with a scoop of coconut ice cream or blood orange sorbet.
Tips
- For extra caramelisation, sprinkle the pineapple with a little brown sugar before grilling.
- This recipe is also delicious on the barbecue.
- Garnish with fresh mint leaves or toasted coconut flakes for extra texture and freshness.
