Wok noodles with Indonesian minced meat
Ingredients (for two people)

500 grams broccoli

2 portions wok noodles (wholegrain if desired)

1 tablespoon olive oil

200 grams lean ground beef

2 garlic cloves

1 slice fresh ginger

1 teaspoon cumin seeds

0.5 teaspoon cloves

1 teaspoon coriander
-
1 teaspoon lemongrass

0.5 teaspoon chili
-
0.5 teaspoon galangal

Pinch of salt

1 teaspoon sambal badjak
-
2 tablespoons ketjap manis
-
1 teaspoon sesame oil
-
1 tablespoon coconut blossom sugar
Preparation
- Cut the broccoli into florets and bring a pot of water to a boil. Cook the broccoli until al dente for about 5 minutes.
- Cook the noodles according to the instructions on the package.
- Heat the olive oil in a pan and add the ground beef. Squeeze the garlic cloves over the pan and grate the slice of ginger. Then add all the spices and crumble the beef with the spices until cooked through.
- Add the broccoli to the pan with the beef, then stir in the sambal, ketjap, sesame oil and sugar. Mix well and heat for 2 minutes.
- Add the cooked noodles to the pan and mix everything together well.
- This dish can easily be prepped in advance for a few days; finish it with, for example, fresh sliced spring onion, coriander or some chopped (unsalted) cashews. Season with some lime juice.
