Ground cinnamon from Ceylon to Sri Lanka (Cinnamomum verum, synonym: Cinnamomum zeylanicum) is a sweet, full of aromatic flavor. It consists of the inner bark of the shoots of the cinnamon tree. Cinnamon from Ceylon is the best quality and is only used by the best chefs.

What is the difference between Ceylon cinnamon and cassia cinnamon?

The main difference between the Ceylon cinnamon and cassia (Cinnamomum cassia) is the content of coumarin. Cassia contains approximately 2 to 5 grams of coumarin, while Ceylon cinnamon contains only approximately 0.015 grams coumarin.
