Cucumber Salad with Creamy Avocado Dressing

Ingrediënts (serves 4 as a side dish)

300 g cherry tomatoes

1 cucumber

8 radishes

1 red onion

A few sprigs of fresh parsley

½ tsp Natural Spices chilli flakes
For the dressing

1 avocado
-
70 g Greek yoghurt
-
1 tsp Natural Spices dill
-
1 tsp Natural Spices parsley
-
½ tsp onion powder
-
½ tsp garlic powder
-
A pinch of salt and pepper

1 tbsp extra virgin olive oil

1 tbsp lime juice
Method

Halve the cherry tomatoes. Using a mandoline, slice the cucumber and radishes into thin slices. Slice the onion into thin half rings. Finely chop the parsley.

Place the tomatoes, cucumber, red onion and radishes in a bowl.

Make the dressing: add the avocado, yoghurt, parsley, dill, garlic powder, onion powder, salt and pepper, olive oil and lime juice to a bowl. Blend with a stick blender until smooth, thinning with 4 tablespoons of water (or more to taste).

Stir the desired amount of dressing through the vegetables. Add the freshly chopped parsley and chilli flakes and mix well. Serve immediately. If you plan to serve the salad later, add the dressing just before serving.
Tip:
Delicious as a side dish at a barbecue.
