Curry rice salad with chicken, mango and cucumber

Ingredients (4 people)
- 250 g basmati rice
- 2 chicken fillets (approx. 300 g)

- 1 ripe mango, diced
- ½ cucumber, sliced into half-moons
- 3 spring onions, finely sliced
- 100 g cherry tomatoes, halved
- 50 g unsalted cashew nuts, roughly chopped
- Handful fresh coriander or parsley
For the dressing
- 3 tbsp Greek yogurt
- 2 tbsp mayonnaise
- 1 tsp Natural Spices Hurry Curry
- 1 tbsp lime juice
- 1 tsp honey
- Freshly ground black pepper to taste
Preparation
- Cook the basmati rice according to the instructions on the package. Drain, let cool and fluff with a fork.
- Sprinkle the chicken fillets with 2 teaspoons Hurry Curry and rub in with the olive oil. Fry the chicken in a pan or on the barbecue until golden and cooked through. Let rest for a few minutes and slice or dice.
- For the dressing, mix the Greek yogurt, mayonnaise, 1 teaspoon Hurry Curry, lime juice, honey and a pinch of black pepper.
- Place the cooled rice in a large bowl and add the mango, cucumber, spring onion, cherry tomatoes and cashew nuts. Fold in the dressing.
- Arrange the chicken over the salad and garnish with fresh coriander or parsley. Serve immediately or let the salad sit in the fridge for an hour so the flavors can meld.
