Creamy pea soup with mint recipe

Ingredients:

For 4 persons

1 onion (chopped), 1 clove of garlic (finely chopped), 1 tsp rosemary, 1.5 tsp Habibi Veggie, 4-5 sprigs of mint (roughly chopped and a few mint leaves for garnish), 800 ml vegetable stock, 500 g garden peas (frozen), 3-4 tbsp crème fraîche, 1 small bag of arugula, half a bunch of chives (finely chopped), olive oil, salt and pepper to taste. 

Preparation method:

Heat a dash of olive oil in a stockpot and fry the onion for about 3 minutes. Add the garlic, rosemary, Habibi Veggie and mint and cook for another 2 minutes on low heat. Pour in the stock and peas. Cook it for about 10 minutes. Add crème fraîche and puree the soup in a blender. Depending on the preference for consistency of the soup, you can still sieve it. Season the soup with salt and pepper. Spoon the pea soup into a bowl. Garnish the soup with a small handful of arugula, some chives and mint leaves and a few drops of olive oil.

Tip: also delicious with pieces of feta and bacon. Also delicious with toasted sourdough bread.
