Crispy cauliflower from the airfryer with Porky's Rub
Crispy on the outside, tender on the inside and bursting with flavor. These cauliflower florets get a crunchy coating thanks to a simple batter and a generous amount of Porky's Rub. Ideal as a snack, a vegetarian side dish or as part of a lunch with a fresh yogurt dip.
Ingredients (4 people)
- 1 medium cauliflower, cut into small florets
- 100 g flour
- 125 ml water
- 1 tbsp olive oil
- 3 tbsp Porky's Rub
- 50 g panko
- Optional: extra 1 tsp Porky's Rub to sprinkle over the cauliflower after baking
For the yogurt dip
- 150 g Greek yogurt or plant-based yogurt
- 1 tsp lemon juice
- 1 tsp finely chopped fresh parsley
- Pinch of salt and pepper

Serve with Honey Mustard Dip
Mix the following ingredients:
- 3 tbsp Honey Mustard Mania Zero
- 2 tbsp Greek yogurt or plant-based yogurt
- 1 tsp lemon juice
- Finely chopped fresh parsley (optional)
Stir everything together and serve as a fresh dip with the hot cauliflower. This gives you a creamy sauce with a slightly sweet mustard flavor that pairs perfectly with the savory crust.
Method
- Preheat the airfryer to 190 °C.
- Mix the flour, water, olive oil and 2 tablespoons Porky's Rub into a smooth batter.
- Put the panko in a separate bowl and mix in the remaining 1 tablespoon Porky's Rub.
- Coat the cauliflower florets first in the batter and then in the seasoned panko so they are covered all around.
- Place the florets in a single layer in the airfryer. Optionally drizzle lightly with oil for an extra golden result.
- Bake for 14 to 18 minutes at 190 °C and shake the basket halfway through. The cauliflower is done when the outside is crispy and golden brown.
- Meanwhile, mix all ingredients for the yogurt dip.
- Serve the hot cauliflower immediately with the dip and optionally garnish with some extra parsley and a lemon wedge.

Variation tips
- Add some grated Parmesan to the panko for an extra savory crust.
- Make it a meal by serving the cauliflower in wraps with lettuce, tomato and yogurt sauce.
- Tasty with fries or a fresh coleslaw as a vegetarian alternative to classic snacks.
Storage
The cauliflower is best enjoyed straight from the airfryer. Leftovers can be stored in the refrigerator for up to 2 days and reheated in the airfryer at 180 °C for 3 to 5 minutes.
