Description

Porky's Rub

PORKY'S RUB: BBQ SEASONING FOR PORK

A great rub is every BBQ chef’s secret weapon. With Porky’s Rub, you’ll impress everyone with your barbecue skills. The blend of dill, mustard and paprika creates a unique flavour profile unlike anything you’ve tasted before. This dry rub for pork is perfectly balanced and ready to use straight from the pack – there’s no need to add anything else, although you can add a little salt if you prefer. And what about serving sauces on the side? We’d argue you won’t need them.

How to Season Pork

Generously massage the rub into a lightly oiled piece of pork. Grill or barbecue the meat until it reaches a slightly pink interior, which corresponds to a core temperature of around 65°C, measured with a meat thermometer.

Remove the pork from the grill and loosely cover it with aluminium foil. Let it rest for about 5 minutes so the juices can redistribute throughout the meat.

Natural Spices Tip

For even more flavour, season the pork with the rub about an hour before cooking. This gives the herbs and spices time to penetrate the meat and develop a deeper taste.

Which Herbs and Spices Go Well with Pork?

Pork pairs exceptionally well with flavourful rubs and marinades. Spices such as paprika, garlic powder, onion powder, black pepper, mustard seed and cumin are often the foundation of classic BBQ seasoning blends. For extra depth and aroma, herbs like thyme, oregano and coriander seed are also commonly used.

Many BBQ rubs combine savoury spices with a subtle touch of sweetness, such as brown sugar or honey powder, helping the meat develop a beautifully caramelised crust during cooking.

A well-balanced seasoning rub doesn’t just add flavour to the outside of the meat – it also helps create the characteristic BBQ bark that makes dishes like pulled pork, pork ribs and grilled pork steaks so popular.

For the best results, massage the rub into the pork before cooking and allow it to rest for a while. This gives the flavours time to absorb into the meat, resulting in a richer taste and an even better barbecue experience.
