Cottage cheese provides a soft texture and extra protein, while eggs give structure. With a good Natural Spices kruidenblend you can effortlessly give these muffins a Mediterranean twist or a spicy kick — without added salt or unnecessary calories.
Ingredients (2 persons – 6 muffins)

4 eggs
-
200 g cottage cheese (well drained)

3 spring onions, finely sliced
-
1 tbsp fresh herbs (parsley or chives), finely chopped
-
1 tsp Natural Spices kruidenblend of choice (see variations below)

Freshly ground black pepper

Olive oil spray
Optional, but recommended as a binder:

1 tbsp grated Parmesan or
-
1 tbsp almond flour or 1/2 tbsp cornstarch
Method (Air fryer)

Let the cottage cheese drain for 10–15 minutes in a sieve. Press lightly to remove excess liquid.

Preheat the air fryer to 165°C.

Lightly grease silicone muffin molds.

Beat the eggs until smooth.

Stir in the cottage cheese, spring onions, fresh herbs and Natural Spices kruiden.

Optionally add Parmesan or almond flour to prevent sogginess.

Fill the molds ¾ full.

Bake for 12–14 minutes at 165°C until the muffins are firm and lightly golden.

Let rest for 5 minutes before removing from the molds.
They will rise slightly during baking and then sink a little afterwards, but that is normal.

Tips against soggy muffins

Always drain cottage cheese well

Pat spring onions dry with kitchen paper

Do not bake below 160°C (too low temperature = too much moisture)

Let them rest a bit in the mold
-
For extra smooth result: blend eggs and cottage cheese first
Flavor variations with Natural Spices
Mediterranean Variant
Fresh, aromatic and perfect for brunch.
Add:

1 tbsp finely chopped sun-dried tomato

30 g crumbled feta

A few finely chopped olives
Garnish after baking with fresh basil.

Add:

1 tbsp finely chopped red pepper

Pinch of chili flakes (optional)
Serve with a spoonful of Greek yogurt and some fresh coriander.
