Savoury Italian Granola

Ingredients (makes several portions)

100 g rolled oats

40 g oat flakes

60 g cashew nuts

60 g hazelnuts

30 g sesame seeds

30 g sunflower seeds

30 g pumpkin seeds
-
1½ tbsp Natural Spices Pizza Perfect seasoning

1 tsp Natural Spices chilli flakes

1 tsp Natural Spices smoked paprika

1 tsp Natural Spices garlic powder

½ tsp sea salt

1 egg white
-
60 ml olive oil

1 tbsp honey
Method

Preheat the oven to 165°C (fan 150°C).

Place the rolled oats, oat flakes, cashew nuts, hazelnuts, sesame seeds, sunflower seeds and pumpkin seeds in a large bowl. Add the spices and salt and mix well.

Lightly whisk the egg white in a small bowl.

Add the olive oil, egg white and honey to the granola mixture and stir until everything is evenly coated.

Line a baking tray with baking paper and spread the mixture evenly over the tray.

Bake for 17–20 minutes, stirring once halfway through. Keep a close eye on it, as ovens can vary. The granola is ready when golden brown.

Remove from the oven and do not stir again. Leave to cool completely so it becomes nice and crunchy.

Store in an airtight container; it will keep well for up to 3 weeks.
Tip
Try using this savoury granola as a crispy topping for burrata or stracciatella, finished with a drizzle of olive oil and a squeeze of lemon. It also works beautifully sprinkled over roasted vegetables (such as courgette or aubergine) or stirred through warm pasta with olive oil and parmesan for an unexpected Italian-style crunch.
