Ingredients (2–3 people)

  • 150–200 g noodles
  • 250 g chicken thigh fillet (or leftover chicken)
  • 1 liter chicken broth
  • 1 carrot (in thin strips)
  • 1 pak choi (or leek)
  • 2 cloves garlic (or 1 tsp garlic powder)
  • 1 tsp ginger powder
  • 1 tsp onion powder
  • 2 tbsp soy sauce or ketjap
  • Pinch chili flakes (optional)
  • Spring onion and/or coriander (garnish)

Method

  1. Season the base
    Heat the broth in a pan and add garlic, ginger powder, onion powder and soy sauce.
  2. Add chicken and vegetables
    Cut the chicken into thin strips and add to the broth together with the carrot. Let simmer gently for 8–10 minutes.
  3. Noodles in
    Add the noodles and cook according to the package (usually 3–5 minutes).
  4. Final step
    Add the pak choi and let simmer for another 2 minutes. Taste and adjust with chili flakes or extra soy sauce if needed.
  5. Serve
    Divide among bowls and garnish with spring onion or coriander.

Variation tip: noodle soup with teriyaki

Want to give this chicken noodle soup a bit more depth and a slightly sweet-savory flavor? Then add 1–2 tablespoons tasty teriyaki sauce to the broth. Teriyaki here does not replace the broth but acts as a flavor enhancer: it rounds the soup nicely and gives a fuller mouthfeel. Combine it with garlic and ginger as in the basic recipe, and taste before adding extra salt - often that is not necessary. This way you make a richer, more pronounced noodle soup in one simple step, without making the dish heavier.
